Touristy stuff/walking around:
Really beautiful, particularly the canals. As far as tourist stuff to do, definitely check out the Rijks Museum--they have lots of cool Rembrandts. I never made it to the Van Gogh Museum or Anne Frank's house or the Heineken factory, but I've heard great things about all of those places--they're just touristy.
During the day, a cool place to walk around is the Nine Little Streets--or it's called something along those lines, I'm kind of rusty I was there almost a year ago! They are nine little streets in a grid shape (hence the neighborhood's name) and I'm sure if you ask anyone they will know where the area is. It’s a really nice area with shops, cafes, etc and really beautiful—definitely worth checking out. Yet because it's kind of nicer so you won't find any "coffee shops" there—places to buy weed are found in the less nice areas or along side streets off the beaten path, or in the squares that have a lot of night life.
Restaurants:
As far as restaurants go, two I liked were Morlang (Keizersgracht 451--that's the address), and Menner Pannekoek (Raadhuisstraat-6, Hoek Singel), where I think we sat outside by the water. The food isn't the highlight of the Amsterdam experience, but it's always fun to go to traditional restaurants and try native dishes, although there is PLENTY of Italian and other types of food around. One delicacy you do have to try though is stroop waffles, which are thin waffle cookies filled with caramel. They’re often served with coffee, and delicious!
Night life:
About the night life, it's incredibly easy to go out and meet people. If you ask anyone they can tell you, but there are certain squares (like Leidsplein, I think?) that have tons of night life options, from bars to clubs to restaurants, smoke houses, etc.
Oh and if you have no moral objections, check out the Red Light District. I haven't been, but it's apparently quite a sight to see!
